If there is one dish that I have been making and eating on repeat with tiny tweaks, it would include some sort of greens sautéed with garlic or onions, quinoa and a bunch of warming spices like cumin, coriander, curry and turmeric.  This dish comes together rather quickly and it can be served warm or at room temperature. If you have read this site for a while you know that the more turmeric the better - this is one ingredient that definitely does the body good.

SPICED QUINOA & GREENS

1 cup quinoa, red or tri-color

3 garlic clover, minced

2 tablespoons cumin

2 tablespoons curry powder

1 teaspoon turmeric

1 teaspoon coriander

4 cups chopped greens, spinach or kale

cilantro for garnish

Directions: Prepare quinoa as directed on package.  Set aside.  Place garlic and a drizzle of olive oil in a sauté pan over medium heat.  Cook for about 3 minutes, taking care not to burn.  Add greens and 1/2 cup of water and sauté until wilted.  Add cooked quinoa into greens and spices.  Stir together.  Season with salt and pepper to taste.  Garnish with cilantro if desired just before serving.  Can be served warm or at room temperature.
