A funny name for such a powerful green.  Meet Lambs Quarter, also known as 'wild spinach' that is chocked full of nutrients.  It is another edible 'weed' that is typically harvested in early to late fall.  It is chocked full of goodness - one cup provides you with more than 70% of Vitamin A and 96% of Vitamin C.  It is also loaded with B Vitamins and is just shy of 4 grams of protein per serving.  For more in this series click here.

When to find it:

It is typically harvested in early to late fall.

How to cook:

Cook with Lambs Quarter similar to how you would cook spinach. Cook it in a bit of broth or water, olive oil, parmesan and garlic for a delicious stir fry.  Or add it in juices or soups.  

Interesting fact:

If mashed up, Lambs Quarter can be applied to arthritis is an issue to reduce inflammation.
