Watermelon, Ginger, and Lime Mocktail

The blissful moments of summer are many including idling by the sparkling sea, gathering wild flowers, savoring long daylight hours, and reveling in the juiciness of fruit like peaches and melons. Watermelon is in peak season now and eating it in quarters is always an option, so is sipping it in a refreshing drink combined with fresh ginger, and lime. It’s great for the morning or cocktail hour. While traditional ginger, which is found all year at the store works, if you can, seek out young ginger, which is grown by some farmers—if you are in New York, Lani’s sells it at its various markets around the city. You’ll fall for its delicious lemon flavor and it has less of a zing than its aged counterpart.

Watermelon, Ginger, and Lime Mocktail

Serves Two

4 pounds of cold watermelon, cut into large pieces, seeds removed if any

2 inch knob of fresh ginger*

1/2 lime, juiced

Place all ingredients into the basin of a blender. Puree until smooth.

*Adjust the ginger to your liking. For more of a zing, add more to the mix.
