Meals on Repeat | Crispy Chickpeas with Garlic Lemon Yogurt
We all look for those meals that are quick, healthy and delicious. Welcome to this new series, Meals on Repeat, where we share easy vegetarian recipes that come together in a jiffy. This recipe for Crispy Chickpeas with Garlic Lemon Yogurt has been a staple in my house as of late. Not only does it come together fast, but it’s also comforting in the way that Middle Eastern food can be. It includes warming spices such as cumin and turmeric and a versatile garlic yogurt that can be used in a variety of other ways including as a salad dressing.
Crispy Chickpeas with Garlic Lemon Yogurt
Crispy Chickpeas
1 can chickpeas, drained and patted dry
Extra virgin olive oil
1 teaspoon ground cumin
1/4 teaspoon ground turmeric
Pinch of salt
Garlic Lemon Yogurt
1 cup Greek yogurt (2% or 5%)
1 garlic clove, finely minced
1/4 lemon juiced
Extra virgin olive oil
Salt & pepper to taste
Parsley or dill for garnish
Directions: Drizzle a healthy dose of olive oil to a sauté pan. Add chickpeas, spices and cook over medium heat until crispy, stirring every few minutes. Meanwhile prepare the yogurt. Place yogurt, garlic, lemon juice in a small bowl, stir to combine. Add olive oil and salt and pepper to desired level. To serve, swoosh yogurt into a bowl or a plate and add crispy chickpeas on top. Drizzle with olive oil. Serve with pita or salad.
