The market here in New York is starting to wake-up, which makes us blissfully happy. As we wait patiently for all of the spring bounty, we also are looking to expand our repertoire by employing new types of greens in our series called ‘Get to Know Your Greens’. Today we are working with wasabi mustard greens, a delightfully peppery vegetable that belongs to the brassica family—it also doesn’t refer to the type of spicy condiment that you enjoy alongside your sushi. It has a very high nutrition profile and is a great source antioxidants and Vitamins A, C and K. They can be enjoyed as is in a salad, or sautéed with garlic and olive oil. Note: As with all simple dishes, it is important to use the highest quality ingredients as possible from the olive oil to the salt.

Wasabi Mustard Greens & White Bean Salad

One bunch of wasabi greens, roughly chopped

1 can cannellini beans, rinsed

1 small shallot, finely chopped

1/2 lemon, juiced

1/4 cup extra virgin olive oil

Flaky sea salt, like Maldon

Directions: Place greens in a medium bowl. Place shallots, lemon juice and olive oil in a small bowl, whisk until an emulsion forms. Add beans over greens then dress. Season with salt and pepper to taste.
