Spiced Coconut & Lentil Soup

A Deliciously Flavorful Recipe

Lentils are one of the most versatile legumes out there and are particularly delicious when simmered with coconut milk, warming spices like turmeric, coriander and cinnamon.  This recipe is incredibly easy and satisfying and comes together in less than 30 minutes.  It only gets better after you make it, so if you are planning ahead, I'd double the batch and enjoy all week long.  

Spiced Coconut Lentil Soup

2 tablespoons coconut oil

1 large onion, diced

4 garlic cloves, minced

1 tablespoon cumin

2 teaspoons coriander

1 teaspoon turmeric

1/2 teaspoon cinnamon

1 tablespoon curry - mild or hot depending on preference

1 can light coconut milk*

2 cups water

1 cup red lentils

2 cups loosely packed spinach

Directions: Place coconut oil in a soup pot over medium heat. Let melt.  Add onions and garlic and allow to become translucent, about 10 minutes.  Add spices and stir to combine.  Add coconut milk, water and stir until combined.  Add lentils, spinach and cook until lentils are soft.  Add salt and pepper to taste.  

*Most coconut milk has unnecessary ingredients like guar gums, we prefer Trader's Joes, light or regular, since the only ingredient is coconut and water.
