Easy Gazpacho
The first time I had gazpacho was on a scorching hot day in Seville, Spain. If there was any place to try it, it was in Spain, so you can gage just how good other versions are that you encounter. This recipe via the NYT was delicious, so easy, especially since I used seasonal tomatoes that are now at the farmers market. This soup is one healthy way to cool down this summer!
Easy Gazpacho
2 pounds tomatoes, like beefsteak roughly chopped
1 large cucumber, chopped
1 garlic clove
1 medium white onion, chopped
2 teaspoons sherry vinegar
1/2 teaspoon salt
1/2 cup extra virgin olive oil
