Pandowdy: a funny name for such a delicious and easy dessert.  It is essentially a pie filling with pie crust cut to shapes and arranged on top, here I made a Peach & Blueberry Pandowdy.   If you follow ROSE & IVY on Instagram, you see the farmers market is bursting with goodness! Between eating and baking, I have my hands full. I wanted to incorporate sweet peaches and blueberries, which sadly it is the end of their season. This is a delicious idea for your next summer get together.

PEACH & BLUEBERRY PANDOWDY

1/2 recipe pie crust, here

8 peaches, chopped

1 pint blueberries

2 tablespoons corn starch

1/2 cup light brown sugar packed 

Pinch of sea salt

1 egg, beaten

turbinado sugar, for sprinkling

Preheat oven to 375 degrees.  Place peaches, blueberries, corn starch, sugar and salt in a bowl.  Set aside.  Flour a working surface.  Roll out half of dough and using a small cookie cutter, cut out shapes.  You can use circles, or whatever shape desired.  Pour filling into a cast iron pan or into a deep dish pan.  Arrange crust on top.  Brush with egg yolk and sprinkle with sugar.  Bake for 30 minutes or until crust is golden. Enjoy warm or at room temperature.
