Ovenly's Peanut Butter Cookies
In life, there are many instants where less is more. This is definitely the case for my new favorite cookie recipe from one of my favorite bakery's in Brooklyn, Ovenly. They offer so many delicious treats, many are gluten-free and even vegan, I actually included them in a roundup for the best chocolate chip cookies in NYC on my previous site - don't mind the awful photography! I have gotten around to trying a few of their treats and my new favorite is the Peanut Butter Cookie that is dairy-free. I did some searching and found the recipe, which is included in their cookbook. This recipe is so easy and includes only 4 ingredients, yes, 4 ingredients and is gluten-free and dairy-free. These cookies will be your new favorite, I promise.
OVEN.LY PEANUT BUTTER COOKIES
1 1/2 cups light brown sugar
2 eggs
2 teaspoons pure vanilla extract
1 container of all-natural smooth peanut butter
sea salt flakes
Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Combine brown sugar, eggs and vanilla in a bowl, whisk to combine. Add peanut butter and mix to combine. Freeze in bowl for 30 minutes. Using a cookie scooper, scoop out dough, sprinkle with sea salt. Bake for 25 minutes or until just golden. Let cool.
