In today's edition of 'Get to Know Your Greens', we are getting acclimated with Swiss chard.  Right now, the market is overflowing with bounty including this green that has leaves larger than I'd say 24 inches.  I love cooking with this vegetable, especially when it comes to soups and stir fry.  

What it tastes like:

Familiar to the taste and texture of spinach.

Health benefits:

Very low in calories, Swiss chard is chocked full of nutrients and vitamins.  It is very high in Vitamin A, C and K. It is also high in iron and complex B vitamins like folic acid and thiamin.  

When to find it:

This green can be found year-round especially during the month of June to November. 

How to cook:

My favorite way to cook swiss chard is to sauté it with garlic and olive oil.  Another great idea is to incorporate it into soup, since it wilts down.  

Interesting fact:

Contrary to its name, Swiss chard does not come from Switzerland.  Rather, it was thought to be derived from the Mediterranean.
