Farmers Market Find | Lemon Cucumbers

Produce is at its peak right now in New York and with it brings new discoveries, such as a lemon cucumber.  The exterior looks like a lemon with squash-like stripes, but once you cut into it the flesh resembles a cucumber. It is even more refreshing than a typical cucumber because it has a citrus taste.  This was perfect eaten raw or would take cucumber water to entirely different level.
