At the Market | Summer Corn & Tomato Salad with Dill Flowers
There are two things about you that you probably do not know; I am a die-hard Seinfeld fan and if you watch the show, I also love a 'big salad'. My go to salad usually sits on a over-flowing bunch of kale. Now that summer is here I am mixing up my salads incorporating other produce, like this one that includes sweet summer corn and tomatoes and topped with freshly cut dill flowers (from my garden!). When it comes to summer meals, easy and effortless are the way to go in my book. What kinds of salads are you making this season?
Summer Corn & Tomato Salad with Dill Flowers
2 ears of corn, blanched
1/2 pint of tomatoes, halved
lemon & extra virgin olive oil, to taste
dill flowers, for garnish
salt & pepper, to taste
Directions: Carefully remove corn from the cob. Combine with tomatoes, drizzle with lemon, olive oil, salt and pepper. Stir to combine. Garnish with dill flowers, if desired.
