ROSE & IVY Journal Salted Coconut Truffles

SALTED COCONUT TRUFFLES

8 ounces good quality 70% chocolate, roughly chopped

1 cup heavy cream

1 teaspoon pure vanilla extract

pinch of salt

2 cups all natural flaked coconut

sea salt flakes for garnish

Place chopped chocolate into a heat-proof bowl.  Bring one cup of heavy cream to a simmer on the stove taking care not to scald cream.  Pour over chocolate and let set for about 3 minutes.  Whisk to combine.  Add vanilla, salt and stir until mixture is smooth.  Refrigerate until completely cooled and chocolate becomes solid.  Place coconut on a plate.  Using a small cookie scoop, form small balls with chocolate and roll into coconut and garnish with sea salt flakes. Repeat until finished.  Serve chilled or at room temperature.
