Holiday Baking | Peanut Butter Cups

ROSE & IVY Journal Homemade Peanut Butter Cups

Peanut butter and chocolate, such a divine combination and probably one of my favorites and my husbands too.  While it is season of cookie baking I feel like candy gets overlooked.  This recipe for peanut butter cups is so incredibly easy, fast and is a great gift to bring to your host or hostess this holiday.

PEANUT BUTTER CUPS

1 cup all-natural creamy peanut butter

1/4 cup light brown sugar

1/2 cup confectioners sugar

pinch of sea salt

16 ounces good quality semi-sweet chocolate, melted

stiff mini cupcake liners (like these or line a mini-muffin tin, but might need to do in batches)

Directions: Lay out mini muffin liners on a baking sheet.  Add peanut butter, brown sugar, confectioners sugar and salt in a small bowl.  Mix to combine.  Melt chocolate in the microwave in a microwave safe bowl.  Carefully pour about 1/2 inch of chocolate in the bottom the liners.  Add 1 to 1 1/2  teaspoons of peanut butter mixture on top.  Finish by covering in chocolate.  Chill in the refrigerator until set.  Enjoy!
