Holiday Baking | Chewy Ginger Molasses Cookies
It is that time of the year again, holiday cookie baking! It is one of my favorite things to do during the month of December and I always bite off more than I can chew (no pun intended) meaning I want to bake a lot. I am kicking this year's baking season off with a Chewy Ginger Molasses Cookie that has been sprinkled with sugar.
CHEWY GINGER MOLASSES COOKIES
2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon salt
2 teaspoons ground ginger
2 teaspoons cinnamon
1/8 teaspoon cloves
1 1/2 sticks unsalted butter, softened
1 cup light brown sugar, packed
1 egg
1/4 cup unsulphured molasses
1/2 cup turbinado sugar, for sprinkling
Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside. In a bowl sift together flour, baking powder and spices. Place butter and sugar into a bowl that is compatible with a mixer. Beat until combined and mixture is fluffy. Add egg and molasses, continue to beat. In three additions additions add flour and mix until combined. Using a cookie scoop, roll into ball and sprinkle with sugar. Bake for 12 minutes or until slightly golden. Let cool before serving.
