Holiday Brunch | Challah French toast with Maple Apple Compote

Christmas brunch might be one of my favorite meals out of the whole year.  There is nothing like being warm and cozy in your house, surrounded by a glimmering tree and family.  Growing up my mom had the tradition of making cinnamon rolls that we gladly indulged in after a morning of opening presents.  The past few years I have followed in those footsteps, but this year I am thinking of making something with a little more substance and that can constitute as brunch.  Since I made a giant loaf of challah bread (see recipe here)  that I ended up freezing, I decided to make French toast and top it warm Maple Apple Compote that has been infused with cinnamon and nutmeg.   This is a perfect meal to celebrate the season!
